1 cup roasted chestnuts
1 cup roasted chestnutschopped
½ cup plus 1 teaspoon bourbon (We used Evan Williams Outdoorsman Edition)
3 cups milk chocolate chips
1 can sweetened condensed milk
4 tablespoons (1/2 stick) salted butter
Start by roughly chopping the roasted and peeled chestnuts and soaking them in ½ cup of bourbon for at least 1 hour and up to overnight (save the bourbon for a really good chestnut flavored Old Fashioned).
Add the chocolate chips, the butter, and the sweetened condensed milk to a microwave-safe bowl.
Microwave 90 seconds, stir well. Back in the microwave for 15 seconds, stir. Back in for 15 seconds more, stir well.
Stir in the chestnuts and a teaspoon of bourbon. Pour the mixture into a parchment-lined 8”x8” (or anything in that range) Pyrex pan. You can butter the parchment paper surface for extra no-stick insurance if you like. Chill inside refrigerator until set (at least 4 hours). Slice the fudge into squares and serve directly from dish or wrap individually with parchment paper.
